Summer Grilled Fruit Kebab

Delicious healthy barbecued summer fruits with honey and lime juice.

017Fruits – You can choose any fruit from below as per your choice.
Banana, Apples, Pineapple, Kiwis, Strawberries, Peach, Apricots (and even firm Mangoes which are easily available during summer)
2 tbsp Butter
½ cup Honey
1 tbsp lemon juice
Powdered sugar
Lime wedges
Bamboo skewers, soaked in water

Cream dip:
4 tbsp cream cheese (softened)
1 tsp sugar
1 cup light vanilla yogurt

Wash all fruit thoroughly and pat dry using kitchen towels.

Peel, core and remove eyes from Pineapple. Also, peel the Kiwis, Bananas and Mangoes. Cut all the fruits into 1 ½ inch cubes and thread onto skewers, alternating various pieces of fruit on each skewer.

Heat grill to medium high.

In a small pan, melt the butter, add honey and lemon juice in the pan whisking continuously until the mixture is warm and runny.

Arrange skewers on the grid of the grill and baste the skewered fruits with the honey mixture.

(Tip: Place a sheet of aluminium foil over the grill and punch in some holes so that fruits are not placed directly on the heat and it prevents them from getting burned)

Grill the fruits until tender and charred (about 5-7 minutes) turning occasionally. Do not burn them.

Remove skewers from the heat. Pour remaining honey mixture and dust with powdered sugar.

(Tip: Powdered sugar can be dusted while grilling to caramelize fruits quickly)

To make cream dip, beat cream cheese and yogurt with until smooth and creamy. Place in bowl and chill.

Serve the fruits kebabs warm with cream dip or ice cream and lime wedges.

Sprinkle some roasted chopped hazelnut over the grilled fruits, as a garnish, if required.
