Succulent chicken kebabs with healthy sauted spinach
500 gm chicken leg and thighs, boneless
2 bunches of spinach, chopped
2-3 onions, chopped
1 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1 tsp ginger garlic paste
6 Tbsp yogurt
2 tsp salt
2 green chilli, chopped
4 tsp fresh coriander, chopped
2 tsp fresh mint, chopped
1 tsp garam masala powder
3 Tbsp roasted chana dal powder/ boiled mashed chana dal
1 tbsp Lemon juice
Cut the cleaned boneless chicken into small pieces.
In a bowl add above chicken, turmeric powder, chili powder and coriander powder. Mix it well, cover and keep it aside.
In a non-stick pan heat some oil. Add half of the chopped onion, ginger-garlic paste and sauté till onions turn golden brown.
Add above chicken, yoghurt and salt and cook till the chicken is tender.
Once the chicken is cooked, keep it aside and let it cool down.
Wash and sauté spinach with only the water that clings to the leaves until it is just wilted. Cool it.
Now shred cooled chicken with your hands.
In a large bowl take chicken and add the cooked spinach, mint leaves, coriander leaves, green chilies, remaining onion, egg, lemon juice, garam masala and chana daal powder.
Mix all the ingredients together and then keep aside for 15-20 mins
Make small patties/tikkis and shallow fry until they turn golden brown and become crispy on both sides.
Serve these kebabs with warm garlic naan bread and yoghurt sauce.
